Corn Oat-bran Bread

Ingrients & Directions


-INGREDIENTS-
1/2 c Yellow cornmeal 1 ea Egg white
1/2 c Oat bran 1 t Baking powder
1/2 c Skim milk 1/8 t Ground allspice
1/4 c Chopped onion 1/8 t Freshly ground black pepper
1/4 c Chopped green bell pepper

DIRECTIONS

Prehead oven to 350 degrees F. Blend all ingredients and pour into a
small (8X14-inch) nonstick loaf pan. Bake for 35 minutes, or until a
knife inserted in the center of the bread comes out clean.
Variations: Using 1/2 cup fresh corn kernels in place of the onion
and bell pepper is a tasty alternative. The addition of 1/4 tsp
cayenne will add a nice bit of spice to this bread.
