Last Minute Christmas Cake

Ingrients & Directions


1 kg Dried mixed fruit
225 g Glace cherries
300 ml Stout
150 ml Whisky
150 ml Orange juice
1 Orange; zest of
3 tb Black treacle
250 g Unsalted butter; slightly
-softened
250 g Soft brown sugar
5 Eggs; lightly beaten
350 g Plain flour
1 1/2 ts Baking powder
2 ts Allspice
100 g Brazil nuts; halved
Marzipan and Royal icing for
-decoration

1 Line the cake tin. In a large pan, place the dried fruit, cherries,
stout, whisky, orange juice, zest and treacle, and bring to the boil.

2 Simmer gently for 10 minutes. In a large bowl, combine the remaining
ingredients and beat together until smooth. Fold in the boiled fruit.

3 Spoon the mixture into the prepared cake tin and level the top. Bake for
3 1/2-4 hours. Cool in the tin, remove and decorate.
