1 qt Old fashion rolled oats
2 c Flour
1 ts Baking soda
1 tb Salt
2 tb Sugar
1 c Bacon grease (no
-substitutions!)
1 c Hot water

this is an old recipe that my family has used for more than 100 years. it
came with us from Scotland i doubt you will ever find it served in a health
food store and its probably not what you are looking for but its quite
good. i’ve never seen it in print but thats not saying much.

Preheat oven to 400 deg F (205 deg. C). In a large mixing bowl mix dry
ingredients together reserving 1/4 to 1/2 the flour for later use. it is ok
to skimp on the salt.

mix in the bacon grease mixing very well mix in hot water quickly or the
product may be tough.

using reserved flour and waxed paper roll dough out thin like a pie crust,
place on a cookie sheet and bake for 12 – 15 min. until golden brown. the
product should come out cracker like. too much softness in the center means
you are not rolling the dough thin enough.

when cool enough to handle break into managable sized servings & enjoy with
butter and your favorite marmalade, or jam.
